I'm making these way-cute cupcakes for my family's Easter dinner on Sunday. I found them on a really fun baking blog called Posy's Party Cakes. All Posy did was toast coconut and sprinkle it over white frosting, then top it with blue candy eggs (and one darling blue Peep for the middle cake).
